Winemaking: VARKING OF WHOLE BERRIES IN A CONICAL STAINLESS STEEL TANK. FERMENTATION WITH INDIGENOUS YEASTS AT 25 DEGREES CENTIGRADE. PUMPING-OVER REGIME TWICE A DAY.

Breeding: 9 months of aging on the grape skins until the moment of decanting and obtaining the wine.

Tasting Note: It has a pleasant onion skin colour with copper tones. On the nose, its aromas are complex, with white flowers standing out, with citrus notes such as mandarin, quince jam, dried fruit and black tea strands. On the palate, it has a pleasant impact, well balanced with acidity. Its prolonged ageing on grape marc gives it soft tannins that give it body, delicate astringency and persistence. Gastronomically, it is a versatile wine, ideal to accompany cheese and dried fruit platters, paellas and light pastas, fresh salads or Creole empanadas.
