Production - Tuscan Method: Harvest and immediate milling under the olive grove, to avoid fermentation of the fruit, short kneading time to avoid oxidation and controlled temperature at 27 degrees Celsius to preserve the freshest aromas and the polyphenolic load, which are the best antioxidants.
