Winemaking: Cold pre-fermentation maceration for 2 days. Fermented in concrete vessels with a capacity of ten thousand kilos. Maximum fermentation temperature 27°C. Total maceration 18 days. Alcoholic fermentation with selected yeasts. Partial malolactic fermentation.

Breeding: 12 months in 225-litre barrels of new and second-hand French and American oak.

Tasting Note: Intense ruby red color, very delicate jam aromas
of tomatoes and spices, highlighting the pink pepper, in the mouth
