Each of the varieties was vinified separately with cold pre-fermentation skin maceration for 5 days at 8° C in stainless steel tanks. Maximum fermentation temperature 30°C for 28 days. Alcoholic fermentation with selected yeasts. 100% malolactic fermentation.
- Breeding
80% of the wine was aged in oak barrels for 12 months, 40% new; 60% second and third use; 20% in concrete tanks.
